Recipe: Fast and Easy Mini Monkey Bread


I have always wanted to make Monkey Bread and I am now getting around to it. This are so easy that it’s something to let the kids help you make! The neighbor actually came and knocked on my apartment door to ask me what I was baking a bit ago because apparently the entire hallway smells good lol.

If you are wondering why mine may look a little different than the instructions, I picked up the Pillsbury Grands biscuits on accident so I worked with it. Be sure you pick up just the regular biscuits. they come 5 to a pack NOT 8. They came out so delicious even with the wrong ones. I will try it again with the correct ones and post a picture at a later time.

Recipe: Banana Walnut Bread

This can be made in a regular loaf pan. I used a Wilton 4 cavity mini loaf pan because that is what I own and it is much easier with the boys to slice off smaller pieces for them. I have included baking times for both below. (Click any image to enlarge) if you try it, let me know what you think! ENJOY!

Ingredients:

5-6 really ripe bananas
1 stick unsalted butter, softened
1 cup white sugar
2 eggs, room temp.
1 tsp. vanilla extract

2 cups Flour
1 tsp baking soda
1 tsp salt
1 cup of chopped Walnuts

Directions:

Preheat oven to 300 F. Grease and flour 2 loaf pans. I used a Wilton mini loaf pan. This took 50 minutes at 300. If you use a regular full loaf pan, bake for 60 minutes.In large bowl, mush peeled bananas with a hand mixer. Add butter, sugar, and eggs. Mix with hand mixer till combined, about a minute. Stir in vanilla.  In separate bowl, sift together flour, soda, and salt. Add this and chocolate chips to wet mixture and fold w/rubber spatula until combined. Divide equally between 2 loaf pans and bake for 1 hour.
